What is freeze dried candy?

So long story short you vacuum freeze, then vacuum dry candy. Our machines are Harvest Right freeze dryers. It is not a short process but the results are worth the wait. Freeze drying keeps the product & flavors the same but the texture changes from chewy to crispy.
